Tonkotsu understand the delicate science of ramen – one has to pay attention to each and every element. They slow cook broths for 16 hours, hand craft noodles, and perfectly marinate gooey-yolked eggs, creating the ultimate bowl of Japanese noodle soup.
Tonkotsu , alongside design partner STAC, also understand the importance of recycling and reusing materials when they can, and this is exactly what they are doing with the restaurants chop sticks.

With chopsticks being a one use item before they are discarded the restaurant has been keen to find a second purpose for them, diverting them from landfill.
With designs being headed up by the talented team at STAC architecture, the Forest & Maker team have been testing concepts for a number of different products for use within the chains restaurants. The first of these ha snow been installed, with a number of bar tops installed within their new Ealing property.
